This Spanish hamburger rice is easy to make and ready in under an hour! You can serve it in a tortilla or alongside another meat and vegetable. You can also make it as a standalone meal or use it as stuffing for stuffed peppers!

Ingredients
1lbBeef, ground
1cupOnion, diced
1Green bell pepper, diced
6clovesGarlic, minced
1packetSazón
6ozTomato paste
14½ozDiced tomatoes with green chilis
2cupsBroth, beef
½cupCorn, frozen
1cupRice, white, uncooked and rinsed
Garnish (optional)
Cilantro, chopped
Instructions
Place a medium-sized pot over MEDIUM heat then add the 1 lb Beef, ground and cook until browned.
Add the 1 cup Onion, diced, 1 Green bell pepper, and 6 cloves Garlic. Continue cooking for about 5 minutes, or until the onion is translucent.
Add the salt, pepper, 1 packet Sazón, and 6 oz Tomato paste. Mix it well.
Add the 14½ oz Diced tomatoes with green chilis, 2 cups Broth, beef, ½ cup Corn, frozen, and 1 cup Rice, white. Bring to a boil, and then reduce heat to LOW and cover.
Let the rice simmer for about 20 minutes, or until the rice is cooked.
Remove from heat, and let rest for 10 minutes to allow the rice to absorb any remaining liquid.
Garnish with chopped Cilantro, if desired. Serve and enjoy!
