Herbed Artisan Bread (with Garlic and Parmesan)
Looking for a warm and beautiful artisan bread to impress guests? This is it! This herbed artisan bread is not very dense and with the savory flavors and aromatics from the herbs: rosemary, basil, oregano and garlic, you will feel like you stepped into the finest Italian restaurant. The flavors of the herbs and parmesan cheese meld together to create this lovely bread that will hit the spot for comfort food and is the perfect bread to serve alongside any entreé, especially an if it is Italian.
I have found that homemade pesto sauce pairs perfectly with this artisan bread, the fresh basil in the pesto really amplifies the flavor of the bread. Another great way to serve this bread is with some extra virgin olive oil, either dipping bread slices into it or drizzling it on top. Sprinkle with some freshly grated parmesan and you will not be disappointed.

Measuring Cups & Spoons
Thermometer: We will need a thermometer in order to ensure our water is in the ideal temperature range for our yeast.
Stand Mixer with Dough Hook: This is optional but will make it easier to throw together.
Large Bowl(s): If you don’t plan to use a stand mixer, you will need an additional bowl to mix the dough in. Otherwise, you will just need one bowl that is large enough to hold the dough in to expand double the size for proofing.
Spatula: This should only be needed if you plan to mix your dough in a bowl or with your hands.
Tea Towel: This will be used to cover the dough while it rises, a lid would also work if your bowl has one.
Baking Sheet: We will need a baking sheet for baking our bread, a standard size will work.
Silicone Mat: If you wish to skip the olive oil, you can use a silicone mat instead.
Ingredients Needed
Yeast: We will be using dry instant yeast for this recipe, this is what makes the bread rise.
Sugar: There is a little bit of sugar in order to feed our yeast to make it bubbly and happy.
Water: To activate and dissolve the yeast we will be using some warm water. It’s important to follow the instructions on your yeast package for dissolving into liquid. Water that is too warm will kill the yeast and if it’s too cold then it won’t activate the yeast.
Salt: Helps enhance the flavors of the bread.
Spices: For this recipe we will be using a combination of rosemary, basil, and oregano to create a lovely artisan bread for a lovely Italian flavor!
Garlic: For more great flavor to back up the herb flavor.
Flour: For this recipe we will be using all purpose flour.
Cheese: It creates that warm, satisfying taste.
Olive Oil: We will need to grease a bowl to proof our bread into, optionally you may wish to use a bare baking sheet to bake the bread and will need to drizzle some oil on to grease the baking.
Butter: We will be using the butter to coat the outside of the bread to give it extra flavor and it helps lock in the moisture. Try making your own homemade butter to use in this recipe!
How to Make Herbed Artisan Bread
Mix the Yeast & Herbs: In a bowl of a stand mixer fitted with a dough hook or in a large mixing bowl, add yeast, sugar, and water. Stir in salt, rosemary, oregano, basil, and garlic.
Form the Dough: Add 2 cups of flour and the parmesan cheese then stir until combined. If mixing in a mixing bowl, you may need to start using your hands as the flour makes the dough more stiff.
Gradually add in the remaining flour (if needed) until you have a smooth and elastic dough that is tacky, but does not stick to your hands.
Let Rise: Transfer dough to a lightly greased mixing bowl and cover with tea towel or lid and let rise about one hour, until doubled in size.
Prepare Oven & Baking Sheet: Preheat oven to 375°F / 190°C and drizzle a baking sheet with olive oil or use a silicone mat.
Shape & Second Rise: Divide dough in half (roughly 300g each) and shape gently into two round loaves. Place dough onto prepared baking sheet and let rise for 15-20 minutes. Top each loaf with half a tablespoon of butter.
Bake: Bake for 18-20 minutes or until golden brown.
Serve: Remove from the oven and serve immediately for best results.
Storage: Store at room temperature for up to two days, best when consumed right after baking up to the next day. The longer it sets, the drier it becomes and is more prone to molding due to the cheese. For longer term storage, wrap tightly with plastic wrap or foil and place into the freezer.

- 1 Tbsp Granulated sugar
- 1 cup Water , warm (follow the instructions on the yeast package for how warm the water should be)
- 1 tsp Fine sea salt
- 2 tsp Dried rosemary
- 1 tsp Dried basil
- 1 tsp Dried oregano
- 6 cloves Minced garlic
- 2 – 2½ cups All-purpose flour
- ⅓ cup Parmesan cheese , grated
- 2 Tbsp Olive oil , plus extra
- 1 Tbsp Butter , salted or unsalted
Instructions
