Green Beans Amandine (in less than 30 mins)
I have found that one of the hardest parts about cooking for my family is finding ways to cook vegetables well. My husband can be incredibly picky about his veggies, and so I need to find delicious recipes for simple vegetables. And that is where this green beans amandine recipe comes in.
I discovered a recipe for green beans amandine a couple of years ago. I made it and my husband instantly loved it. Since then, I have tweaked the recipe greatly and taken it to various family dinners, and it has always been a hit. It is quick, easy, and oh, so delicious.
And the best part to me? They just look and taste fancy, but they are so simple.
Equipment & Tools
Medium Pot: These beans are boiled before all of the yummy sauce is added to them, so you need a pot that can comfortably hold all of the beans.
Wooden Spoon: I like to use wooden utensils in my cooking but a metal or silicone spoon would also work.
Colander: You will need a large colander to drain the beans after boiling.
Ingredients Needed
Green Beans: Good-quality, fresh green beans are the best for this recipe. However, frozen green beans work as well! You can buy the pre-cut frozen beans or the frozen long beans. I have done both fresh and frozen, and they both taste delicious. Just stay away from canned green beans, as they are quite mushy.
Butter: Butter helps to create the sauce for these beans. Use a good-quality, unsalted butter.
Garlic: Garlic is a star in this recipe. It helps to bring a wonderful garlicky flavor to these beans. You won’t want to go without it!
Apple Cider Vinegar: This one may seem like a surprise, but do not skip it! The vinegar brings a slight tang to the beans, which help to counteract the sweetness from the brown sugar. As someone who usually does not like anything to do with vinegar, I love it in these beans.
Brown Sugar: Brown sugar brings a wonderful note of sweetness to these beans, without being overpowering.
Almonds: “Amandine” refers to a dish that is served garnished with almonds. So, of course, almonds are a necessity in this dish. They add a nutty flavor to these beans, and they look pretty, too!
Salt: Salt is great for enhancing dishes, especially to get the sweet and salty mix. However, it is optional so it is best to taste the finished dish then add as needed.
How to Make Green Beans Amandine
Prepare the Beans: Thoroughly wash your green beans, if you are using fresh. Then, cut or snap the ends off of them.
Boil the Beans: Bring a medium pot of water to a boil. Add the beans and boil until the beans are tender, about 6-8 minutes. If your beans are cut, they may cook faster, so be sure to keep an eye on them, testing them every few minutes.
Drain the Beans: Drain the beans into a colander. Set them aside and return the pot to the stove.
Start the Sauce: Reduce the heat to medium-low and add the butter. Once the butter is melted, add the minced garlic and cook until fragrant, about 30 seconds.
Finish the Sauce: Add the apple cider vinegar and the brown sugar, mixing well to combine.
Add the Beans: Once all of the ingredients are combined, add the beans back to the pot. Toss to coat with the sauce.
Finish with the Almonds: Add the sliced almonds to the beans, tossing to combine. Taste, and season with salt, if desired.
Serve: Serve these beans warm, and enjoy!
Storage: You can keep these beans in an air-tight container for up to three days in the refrigerator. I don’t recommend freezing the cooked beans, as they can become mushy when thawed and heated up again.

- 2 cloves Minced garlic
- 2 tsp Apple cider vinegar
- ½ cup Light brown sugar , packed
- ½ cup Sliced almonds
- Fine sea salt
Instructions
- Thoroughly wash your green beans, if you are using fresh. Then, cut or snap the ends off of them.
- Fill a medium pot with water and bring to a boil. Add 2 lbs Fresh green beans, and boil them until tender, about 6-8 minutes.
- Drain the beans and set aside.
- Turn the heat down to medium-low. In the same pot, add 2 Tbsp Unsalted butter. Once the butter is melted, add 2 cloves Minced garlic, minced. Cook until fragrant, about 30 seconds.
- Add 2 tsp Apple cider vinegar and ½ cup Light brown sugar, packed. Stir until the sugar is melted and everything is combined.
- Add the green beans back to the pot and toss to combine.
- Add ½ cup Sliced almonds and combine. Taste, and season with Fine sea salt, if desired. Serve warm and enjoy!
Storage
- Keep leftovers in an air-tight container in the fridge for up to 3 days. Freezing is not recommended as the beans can get mushy when thawed.
