Easy Crock Pot Chicken Tacos (With Only 4 Ingredients!)
One of my favorite, easy, incredibly simple crock pot recipes is my chicken tacos. With only four ingredients, it is quick to get going during busy mornings, yet it is packed with flavor. These tacos are typically served with tortillas and whatever toppings you would like, but I have also found that it is great to serve over rice, as well.
If there is one kitchen appliance that I absolutely love, it is my crock pot. As someone who works full-time, I love getting dinner going before work and having it ready to eat when I get home. It is a game changer on busy weeknights. Give this recipe a shot, and I hope it makes some of the hectic days a little more peaceful around dinner time!
Equipment & Tools
Crock Pot: All of the magic in this recipe happens in a crock pot! This allows us to throw all the ingredients in, and not have to manage it until it is all cooked and done!
Wooden Spoon: I like to use wooden utensils when cooking food so I don’t have to worry about my pans getting damaged.
Forks: To shred the chicken easily after it is done cooking, we will use two forks.
Ingredients Needed
Chicken Breasts: You can’t have chicken tacos without chicken, of course! Be sure to trim off as much of the fat as you can. I usually use around 1 lb. of chicken for this recipe.
Salsa: All of the seasoning and spice comes from a good salsa. Be sure to use your favorite, whether mild or hot!
Black Beans: Black beans help to add more protein and substance to these tacos, and they’re just delicious! I use canned beans (drained and rinsed) in this recipe, but you can use dried, as well. Just soak the dried beans overnight, and then measure about 1 1/2 cups of the pre-soaked beans.
Frozen Corn: The corn helps to give little pops of sweetness throughout these tacos! A good frozen corn is what you want to use, as canned corn will be too mushy after it cooks.
Tortillas: You will need a good tortilla that holds up well to eat these tacos! Alternatively, this is also wonderful when served over rice!
Toppings: You can top these tacos with any of your favorite tacos, from cheddar cheese to sour cream to lettuce and tomatoes!
How to Make Easy Chicken Tacos
Add the Ingredients: Place the chicken breasts into the crock pot. Then, add the corn and beans. Pour the salsa over top of everything.
Set the Crock Pot: Secure the lid to the crock pot, and then set the crock pot to LOW for 6-8 hours or HIGH for 4-5 hours.
Serve: Shred the chicken, stir everything together, and then serve with the tortillas and toppings!

- Place 2 Chicken breasts into the crock pot then, add 2 cups Frozen corn and the drained and rinsed 15 oz Black beans, canned. Pour 16 oz Salsa over top of everything.
- Secure the lid to the crock pot, and then set the crock pot to LOW for 6-8 hours or on HIGH for 4-5 hours.
- Shred the chicken, stir everything together, and then serve with Tortillas and Desired toppings!
